WW Meal Prep: Mini Mexican Pizza|Taco Salad|Mexican Egg Cups



Mini Mexican Pizza Cups (2 Smart Points Each)

Mini Taco Salads (4 Smart Points–Version I made in video)

Spring Mix/Romaine/Iceberg Lettuce (Use any kind of salad greens you enjoys) (0 SP)
97 % Lean Ground turkey seasoned with remaining taco seasoning (0 SP)
1 tablespoon of low-fat shredded cheddar cheese (1 SP)
Frozen Corn (0 SP)
Chopped tomatoes with diced cilantro (0 SP)
4 Doritos Corn chips chopped (1 SP)
1 tablespoon of chopped Avocado (1 SP)
1 tablespoon of light sour cream (1 SP)
Salsa for topping/dressing (0 SP)

Enjoy adding whatever toppings you enjoy. Black beans would also be nice on this salad!

Mexican Egg Cups (1 Smart Point Each)

Place 12 cupcake liners in a cupcake pan. Spray each liner with cooking spray.
Pour egg mixture/egg whites/egg substitute, until each liner is ½ full. (0 SP)
Add 1 tablespoon of salsa of your choice (0 SP)
Add 1 tablespoon of light shredded cheese in each liner (1 SP)
Add 1 tablespoon of frozen corn in each liner (0 SP)
Top with diced green onions and black pepper for taste (0 SP)
Bake at 350 degrees for 20-30 minutes, based on your oven.
May be placed in a zip-lock bag and frozen for daily meal prep.
