Boccoli Cheddar Soup

Tequila Lime Marinade for Chicken;
-1 cup lime juice
-1/2 cup orange juice
-2 tablespoons minced garlic
-2 tablespoons minced cilantro
-2 tablespoons honey
-2 tablespoons brown sugar
-1 jalapeno diced
-1 shallot minced
-2 teaspoons salt and 1 teaspoon pepper
-3 tablespoons oil
-1/4 tequila
Mix all together. Enough marinade for 24 chicken breasts.

Strawberry Spinach Salad with Poppyseed Dressing

Salad: 8 oz baby spinach leaves 16 strawberries sliced thinly ⅛th red onion cut in very thin shaved slices 4 oz
crumbled blue cheese 28 candied pecan halves Poppyseed Dressing: 1 clove garlic finely minced 1 Tablespoon
Gulden’s mustard 2 Tablespoons honey 3 Tablespoons red wine vinegar ½ cup light olive oil (or vegetable oil) ½ tsp
salt ½ tsp pepper 1 Tablespoon poppyseeds
Ingredients
Salad:
8 oz baby spinach leaves
16 strawberries sliced thinly
⅛th red onion cut in very thin shaved slices
4 oz crumbled blue cheese
28 candied pecan halves
Poppyseed Dressing:
1 clove garlic finely minced
1 Tablespoon Gulden’s mustard
2 Tablespoons honey
3 Tablespoons red wine vinegar
½ cup canola oil
½ tsp salt
½ tsp pepper
1 Tablespoon poppyseeds
Instructions
1. Place ¼th of spinach, strawberries, onions, and blue cheese onto four large salad plates.
2. Place all dressing ingredients in pint canning jar, and shake vigorously for one minute. Spoon dressing over
salad.
3. Sprinkle 7 sugar pecans onto each salad.

Thai Coconut Marinade for Chicken
-6 tablespoons coconut milk
-1 tablespoon soy sauce
-2 tablespoons brown sugar
-1 tablespoon minced garlic
-1 1/2 tablespoons minced ginger
-1 Thai chili pepper thinly sliced
-1 teaspoon sherry

Oriental Chicken Salad Dressing
-3 tablespoons honey
-1 1/2 tablespoons rice wine vinegar
-1/4 cup mayonnaise
-1 teaspoon Dijon Mustard
-1/8 teaspoon sesame oil

Brown Derby Cobb Salad
Ingredients
1/2 head iceberg lettuce
1/2 bunch watercress
1 small bunch curly endive
1/2 head romaine
2 tablespoon minced chives
4 ounces chicken breast cooked and shredded
6 bacon cooked and diced
1 avocado peeled and diced
3 hard cooked egg peeled and diced
1/2 cup Roquefort cheese crumbled
1/2 cup French Dressing
Chop lettuce, watercress, endive, and Romaine in very fine pieces. Mix together in large wide bowl. Arrange
chives, tomatoes, chicken, bacon, avocado, eggs, and cheese in rows over lettuce. At the table pour Special
French Dressing over salad, toss and serve.

Ingredients:
1 1/2 pounds Boston, Bibb, green or red leaf
lettuce, or a mixture, washed, trimmed, and
dried
Kosher salt and freshly ground black pepper
1 cup dressing of your choice, such as shallot
or herb vinaigrette, ranch, or blue cheese
4 ounces imported Swiss cheese, cut into 2-
inch long matchstick pieces
4 ounces baked ham, cut into 2-inch long
matchstick pieces
4 ounces smoked turkey, chicken or duck
breast, cut into 2-inch long matchstick pieces
4 ounces rare roast beef, cut into 1/4-inch by
2 inch matchstick pieces
2 hard-cooked eggs, shelled, cut into wedges
1 ripe Hass avocado, diced
16 vine-ripened cherry or grape tomatoes,
halved

Tear the lettuce into bite-sized pieces and put into a large mixing bowl. Season
with salt and pepper to taste and toss with 1/2 cup of the dressing. Divide the
lettuce among 4 large individual serving bowls. Arrange the cheese, meats, eggs,
and avocado, like the spokes of a wheel, on top of each salad. Scatter the tomatoes, on top. Season with salt and pepper to taste. Serve and
pass the remaining dressing at the table.
