How to Prepare for the Week; Meal Plan, Calendars & Food Prep



Here is how I stay on track with our busy life schedule as well as stay on budget plus keep us eating healthy home cooked meals, most of the time! I try to be flexible and by all means I am not perfect so some days I don’t cook because life or laziness gets in the way. Thanks for watching!

Recipes-
Beans: *I buy in bulk from WinCo
1 teaspoon oil
Chorizo (depends on your taste & the tube you buy, usually I use about 1/5 of the tube)
¼ cup chopped onions or less
3 teaspoons Granulated Garlic
1 teaspoon Ground Cumin
½ teaspoon Chili Powder
1 bay leaf
1 ½ cup beans
6 cups water or broth (usually I use water)
Begin by cooking the chorizo with oil and onions, mix and cook about 5 minutes. Once ready mix the dry beans in with ½ cup water. Then add all the dry seasonings besides salt. Add rest of water, bring to boil, and cover. Cook for about 2/3 hours on low/medium. After 2 hours check the beans and taste the broth, add salt and any additional seasonings needed once the beans are soft and ready.

Quinoa: *I buy from Costco
1 teaspoon oil
1 cup quinoa
2 cups broth or water (I typically just use water)
Place oil in pan and let warm up, then add quinoa and mix for 1-2 minutes than add water, bring to a boil. Once boiling cover and reduce heat to low/medium and cook for 15 minutes. Take off heat and let the quinoa steam for 5 minutes.

Egg Bake: *I buy eggs from Costco
6 eggs
A splash of milk or water
Salt/Pepper to taste
Any add ins (spinach, tomato, quinoa, etc.)
Combine eggs with milk or water and mix until smooth. Once smooth add other ingredients and poor into a greased pan or baking dish. Top with cheese if you wish and pop it in the oven at 350 for about 20 minutes or until fully cooked.
