How to cook Singapore vermicelli rice noodles



Singapore style vermicelli / rice noodle is a popular Chinese dish consume in restaurants and take away in UK. It’s a spicy dish with different meats and cooked with curry paste. The brand I used was made by Fern. Below is my recipe on how to cook the perfect Singapore vermicelli / rice noodle.
Preparation is important when cooking the perfect Singapore vermicelli / rice noodles. If you do not know how to prepare the vermicelli / rice noodle for cooking; refer to my last uploaded video which showed how to prepare dried vermicelli / rice noodle for stir fry.

Singapore vermicelli / rice noodles recipe;

50g char siu pork
50g cooked chicken breast
50g cook prawns
260g vermicelli / rice noodles
120g bean sprouts
30g onion
1 stalk spring onion
1 red chilli
1 egg
1 teaspoon toasted sesame seeds

Condiments
2g salt
2g MSG
1 tablespoon dark soy sauce
1 tablespoon fern curry paste
Dash of cooking wine
Dash of white pepper powder

Method;

Blanch the chicken, char siu pork and prawns for 1 minute, drain and set aside.
Heat wok with some vegetable cooking oil, add egg and the rest of vegetables and vermicelli.
Stir fry for a minute under medium heat.
Add the chicken, prawns and char siu pork, follow by salt, MSG, dark soy sauce and fern curry paste.
Stir fry for another few minutes and turn heat to max. Add dash of wine and white pepper powder to complete.
