この料理を始めていただいたのは2011年のこと。枝豆とリードゥォーと合わせてくれました。グランメゾン東京にも登場していましたが、たまたまその回を見ていた私は、この料理が登場したときにはびっくり。先日お伺いしたときには北寄貝との組み合わせで約9年ぶりに登場しました。
カンテサンスでは同じものを出さないことになっていることはご存知の通りですが、同じようなものが出てきても組み合わせる食材が違う。以前もズッキーニのお料理が 7年ぶりくらいに出てきましたが、合わせたものが海老が蟹になっていたりして、、、。
実は同じソースが2ヶ月続いて出てきて、前回も出たやん・・・と思ったことも一度だけありましたけど・・・。しかし、何年経ってもそのお料理が記憶に残っているのはすごいと。
オープン直後に伺い今だにしぶとくお伺いしていますが、よくよく考えると、食べた人の脳裏に長い間残っているお料理を作ってくれた岸田シェフ。たくさんの時間と労力をかけ、磨き上げた賜物ですね。
