WW Weekly Meal Prep: Vegetable Lasagna (7 Smart Points) Lent Friendly

Here is a video on how to make homemade Vegetable Lasagna that is quick and easy. Great for meal prep and for dinner/lunches. Hope you enjoy!

Ingredients:

1 Jar of Marinara Sauce (I used Organic Marinara Sauce from Aldi)
1 package of 2% milk Mozzarella Cheese (1 3/4 cup of cheese)
1 Container of light Ricotta Cheese (1 3/4 cup of cheese)
1 small bag/box of frozen chopped spinach (thawed and drained)
1 small package of white mushrooms sliced
1 zucchini cut in half and sliced into half moon size
1 small white onion diced
1 green pepper diced
1 tablespoon of olive oil
Olive oil spray to coat glass dish (9X13)
salt/pepper/Italian Seasoning to taste
1 tablespoon of crushed garlic
1 box of Barilla (Ready to bake Lasagna noodles (no boil) You will need 9 pieces total.
1 egg

Directions:
Chop all vegetables as stated above. Using a large saute pan, add oil, garlic and veggies and cook until softened on medium heat (don’t overcook). Add salt, pepper and Italian Seasoning to taste while cooking. Put aside.
Using a medium sized bowl, add ricotta cheese, 1 egg, spinach that has been thawed and drained, salt/pepper to taste, and mix until well combined. Set aside.
Heat oven to 350 degrees. Using a 9X13 glass/metal pan, spray with cooking spray to prevent sticking. Add a light layer of tomato sauce to the bottom of pan. Add three sheets of lasagna noodles to cover pan. Add another thin layer of tomato sauce. Add spinach and ricotta cheese and spread so it covers the whole pan evenly. Add three sheets of lasagna noodles to cover pan. Add a thin layer of sauce. Add all sauteed vegetables and spread evenly to cover pan. Add last layer of 3 sheets of lasagna noodles to cover pan. Add a thin layer of tomato sauce. Top with small bag of Mozzarella cheese. Top with chopped parsley, Italian Season and pepper to taste.
Place pan in oven at 350 degrees for 45 minutes. Check after 30 minutes; if cheese is starting to brown, cover with foil for last 15 minutes. Let sit for 20 minutes before cutting into 8 servings, so pieces are more firm. Enjoy! 7 points per piece, 8 servings per pan. Lasagna freezes well!
