Orzo is so easy to use in one-pan meals like this vegetarian Mexican orzo skillet!
I used soyrizo, but you can absolutely use tofu, tempeh or animal proteins like chorizo, ground meat or shredded chicken.
It lasts for 4 days in the fridge and up to 3 months in the freezer! Reheat it in the microwave or on the stove.
