These turned out surprisingly good and were super easy to make. I used soaked nuts, raw honey, lemon and coconut to makes these delicious little bites. .

crust:
1 1/2 cups raw soaked & dehydrated walnuts
1 cup unsweetened coconut flakes
3 tbsp raw honey
1/4 tsp sea salt
zest of 1 lemon
1/2 tsp vanilla .

filling:
2 1/2 cups raw cashews soaked in water for at least an hour, and drained
3/4 cup organic coconut cream or thick part only of 15 oz can coconut milk
1/2 cup raw honey
Grated zest of 2 lemons
1/2 cup fresh lemon juice
2 tbsp organic coconut oil
1/8 tsp sea salt

for the crust:
Place all ingredients in a food processor until it sticks a bit (do not over-mix or it will become greasy, like a nut butter) then press into 9 inch tart pan bottom or mini silicone muffin pan and up the sides; freeze while you prepare the filling.

for the filling:
Place all ingredients in a food processor until a creamy mixture forms. Pour the mixture over the chilled crusts, then place in the freezer and allow to chill for 3+ hours or overnight. Alternatively, you can refrigerate overnight to set (this will avoid having to thaw before serving)
Once ready to serve, thaw in the refrigerator for 1-2 hour to soften (unnecessary if you didn’t freeze)
