I have a confession to make, I used to hate kale!!! Despise it in fact! Now I don’t know if I hated it because everyone was “haling kale” or I just thought it was so gross. . . I hadn’t thought about kale in nearly 2 years as it’s not readily available in Asia, however a few months ago a larger supermarket started stocking it from a local grower. They had this and Rainbow chard. I grabbed a packet of each and actually squealed with excitement at the prospect of not having Bok Choy, or there strange looking spinach. . . I’ve been getting quite creative with the kale and last night I made this dish, oh it was heavenly. On a side note kale is packed with iron, calcium, magnesium and B vitamins. . . 300gms Kale 100gm Cabbage grated 1 Beetroot Grated 1 Carrot Grated. 1 Apple Grated 1 Orange Diced 3 Green Onions . . Dressing 2 Cups of Celery 1 Zucchini Peeled 2 Tbs Hempseeds 1 Clove of Garlic 1 Red Shallot 2 Medjool Dates Soaked 1 Lime Peeled Blend . . Mix dressing and salad together and enjoy!!! This is huge, but I ate it all. 😋 I love Kale Now!!! 💕
