Fermented Pearl Millet Porridge Kambu Koozh Bajra Porridge கம்பு கூழ் கம்மங்கஞ்சி கம்மங்கூழ்

Pearl Millet (also called as Kambhu in Tamil, Bajra in Hindi) is one of the oldest millet used by our ancestors. It is known to have very high fiber content which makes it healthier. It has High iron content, High Zinc content, High fiber, Flavonoids, phenolics Omega 3 fatty acids, etc and has Low glycemic index.

Kambhu koozh or pearl millet porridge… porridge is generally a simple recipe and less time consuming… this millet porridge can be prepared in the night, ferment overnight and morning instant breakfast is ready in minutes.. this can be carried to office for lunch too.. this porridge gives excellent energy through out the day. this preparation method makes this very easily digestible..helps to reduce the stomach fat and belly… do try and let me know the feedback…

Ingredients: Pearl Millet Porridge
Pearl Millet – 1/2 cup
Water – 2.5 cups
Butter Milk – as required
Salt
curry leaves,carrot, onion, ginger and coriander leaves to garnish

wash and clean well
soak in warm water overnight or for 12 hours..
you can reduce soaking time to 4 – 6 hours..
but 12 hrs soaking time ensures better absorption of nutrients
soaking millet is very important to neutralize inhibitors,
avoid digestion issues and enhance better nutrient absorption..
next day, filter soaked millet and grind to coarse rava you can prefer to buy pearl millet rava and soak
Let it cook well.. takes about 15 to 30 minutes
keep stirring to avoid burning at the bottom
give sufficient time for the millet to cook
pearl millet is difficult to digest if not cooked properly
[serve Pearl Millet Porridge with your favourite side dish like pickle, vathal, vadagam or fryums
