💭 Dreaming of tomorrow when breakfast means something besides a Starbucks breakfast sandwich for me and something besides air for Mom.


The first few months after transplant are when we have to be extra careful to avoid infectious people or environments. Unfortunately this means giving up one of our most favorite activities (for now): going to Zinc for breakfast, lunch, brunch, snacks….you get it, we love this place. •

At my moms heart transplant evaluation last July, we were informed she would have to eat her eggs fully cooked if she receives a transplant. This is because raw eggs also come with a risk of contracting Salmonella. If anyone gets sick with salmonella it’s not ideal, but the affects are especially dreadful for someone with no immune system due to taking high dose steroids and anti-rejection meds. My mom was very hopeful she’d never have a heart transplant but, being the dream patient she is, from that day on she started ordering her poached eggs at Zinc cooked ‘hard’ in order to “practice” this new life. She’s literally the most perfect patient!


At home we’ve also gotten used to cooking our scrambled eggs perfectly, and are saving our poached egg craving for when we finally get to go to Zinc again. The other day she said to me, “I wonder if the girls at Zinc are worried about where I am.” So if any of you are reading this, she’s okay! And is veryyyy excited to get back to her Avocado Toast on gluten free bread, no butter, poached eggs cooked hard •
