Quick & Easy Chicken Fajita Recipe



Fajita Friday anyone?! This colorful, yummy meal is perfect for those with kids – so easy to throw together on a sheet pan and bake! The whole family will be begging for this delicious lettuce-wrapped dinner every week!

RECIPE:

1 lb chicken breasts sliced into strips
3 bell peppers – yellow, red, and green
1 medium onion cut into thick slices
1 lime, juiced
2 TBSP extra virgin olive oil
1 TBSP chili powder
1 TSP cumin
1 TSP garlic powder
1 TSP salt
Black pepper to taste
1 head of butter lettuce
3 avocados

1. Preheat oven to 375°F.
2. Slice chicken breasts.
3. In a large bowl or zip lock baggie, add chicken, chili powder, cumin, garlic powder, salt, and pepper. Shake or mix well until chicken is well coated.
4. Spread evenly on a baking sheet. Make sure the chicken is in a single layer. Add the onions and peppers to pan around the chicken. Sprinkle with lime juice.
5. Bake for 20-25 minutes or until chicken strips are cooked through and peppers and onions are tender.
6. Serve immediately in butter lettuce “shells”. Top with avocado.
