This is a snap story. Apologies in advance for the disorder of sequences.
Kabsa is my favorite dish from the gulf region. I like mine rich in texture, spices and full of colour.
Recipe and order of method
4 tbs of olive oil, and a knob of butter.
One diced onions.
1 clove of grated garlic & ginger (same size).
2 sliced and diced tomatoes.
4 tbs of tomatoe paste.
1 tsp of salt, black pepper, gara marsala
3 tsp of kabsa spice mix,
1 cinnamon stick, 3 cloves, cardomom pods, 1 bay leaf, 1/2 a tsp of mustard seeds.
2 chicken breasts, cut into cubes.
3 cups of rice.
6 cups of water.
2 chicken stock cubes.
Bring to a boil. Cover with baking paper so as to get a steamy texture. Then simmer for 15 mins or so..
