Mlokheyeh with chicken
Ingredients: 4-6 Servings
1.5 kilograms bone in skin on chicken pieces

To marinade the chicken:

½ teaspoon turmeric
½ teaspoon black pepper
½ teaspoon spice mixture (available in Maqloubeh video description)
1/8 teaspoon cayenne pepper
1 teaspoon salt
1 table spoon fresh lemon juice
3 garlic cloves, mashed
1 large onion, thinly sliced
1 tablespoon vegetable oil

To prepare Mlokheyeh:

400 grams frozen chopped Mlokheyeh
2 cups chicken broth
1 small onion, finely chopped
¼ teaspoon ground coriander
1/8 teaspoon black pepper
1/8 teaspoon turmeric
1/8 teaspoon spice mixture
1 tablespoon lemon juice
2 large garlic cloves, mashed
1 teaspoon vegetable oil
1 teaspoon butter

Directions:
-mix all the ingredients for the marinade and massage the chicken pieces, make sure to rub the spices under the skin
-add the sliced onion to the chicken pieces
-cover the baking dish with foil and bake in the centre of a preheated oven at 400F, cook for 30 minutes, then reduce the heat to 350F and cook for 1 hour .Remove the foil and allow the chicken to brown for about 20 minutes.
– Heat 1 tablespoon of vegetable oil in a medium sauce pan over medium heat.
-Sautee the chopped small onion until it starts to change its color, about 5 minutes
-Add the chicken broth
-Bring to a boil over high heat
-Add the frozen mlokheyeh and the spices and salt to taste
-Stir well, then add 1 tablespoon of fresh lemon juice
-Bring the mlokheyeh to a boil
– Reduce the heat; let it cook for 5 minutes
(Meanwhile, heat 1 teaspoon of vegetable oil along with 1 teaspoon of butter in a small skillet, sauté the mashed garlic until golden, add a ladle of mlokheyeh to the skillet and mix with the fried garlic)
-Add the garlic mixture to the pot and shut off the heat, mix well.
-Serve Mlokheyeh with the roasted chicken, white rice, lemon wedges, green olives and assorted pickles.
