Chef Burak Özdemir at Hatay Medeniyetler Sofrasi in Istanbul is a master at making meat kebabs. One of the restaurant’s many kebabs is a “Meter Kebab” that’s almost 40 inches long. Özdemir molds the kebabs by hand before they’re roasted.
